As you know, on the ketogenic diet you can have vegetables. To be frank I tried carnivore (all animal based and fat), but I'm just missing some side or vegetables.
What are the most common and lowest carb vegetables?
These numbers based on 100 g or 3.5 ounces per servings:
1. Spinach, mushrooms, celery, butter lettuce 0-1 g net carbs
Full of vitamins and minerals, such as iron and potassium.
2. Avocado, asparagus, lettuce, heart of palm 2 g net carbs
Avocado is rich in healthy fats, boost satiety, protect your heart, increase brain function, promotes healthy digestion and contains some protein.
Asparagus is full of antioxidants, helps gut health, can prevent UTI and contains vitamin E and K.
Lettuce is great source of vitamin A, which is needed for healthy bones, skin and eyes.
3. Cauliflower, green pepper, cabbage, cucumber, olives, eggplant, zucchini, kale
2-3 g net carbs
The most common about these vegetables, that each of them contain some source of vitamins and nutrition to either promote your gut health, boost your immune system or help manage blood sugar and weight.
4. Green beans, red pepper, broccoli, jicama, tomatoes 4 g net carbs
They help fight inflammation and good source of protein and fiber.
5. Brussels sprouts, yellow pepper, spaghetti squash 5 g net carbs
They are full of fibers and may protect against cancer, help with high cholesterol, high blood pressure and diabetes.
This list of vegetables just an example. You may consume others as well, but remember, some vegetables are high in carbs like corn, legumes, potatoes, carrot a parsnip and other squash items can reach 13-32 net carbs per servings. Also they might take much longer time to digest.
The best vegetables to consume are always with high healthy fat content and the leafy once.
And the more color they have, more carbs.
